I Heart Hamburgers, Part Two
I'm a cheeseaholic. that's primarily why I think this week's endeavor sucks. However, I'm keenly aware of the health benefits to living and eating this way.
When Ellie was three months old, she had crazy tummy issues that her pediatrician attributed to a possible dairy allergy. In order to alleviate her pain, as I was breastfeeding, I stopped consuming anything and everything that came from a cow. Turns out, it was a dairy allergy after all but I lost an insane amount of weight and felt much, much better.
Just to note: Ellie will not be partaking in this culinary adventure with us. As she is nearing one year old, a meager 17 pounds, and will only eat blueberry yogurt at this time, it would not be a wise move. She needs all the fat and nutrients that come from dairy.
Here's our tentative menu for the week:
Roasted sweet potatoes and cauliflower with coconut oil and garam masala over Quinoa, with a coconut curry sauce, topped with slivered almonds and cilantro
Avocado, Arugula and Basil Pesto over Whole Grain Penne
Grilled Portobello Mushrooms over an Arugula Salad with Balsamic Roasted Red Peppers
